Holiday Potluck
For my company’s holiday potluck I decided to do some other folks recipes.
Mini Steak Sandwiches with Mustard-Horseradish Sauce
I made Mini Steak Sandwiches with Mustard-Horseradish Sauce an adaption of a recipe from My Recipes. Beef tenderloin was too pricey for me I bought a 1 lb top sirloin, pan seared it and sliced it thinly to stretch the recipe out make 25 servings. My local Publix also did not sell watercress so I substituted it with arugula.
Grasshopper Pie
The grasshopper pie is the recipe my grandmother uses which came from a newspaper clipping. Written by Nan Wiley.
Crust:
- 16 chocolate sandwich cookies (e.g. Oreos)
- 7 tbsp of melted butter
Crush the cookies with a rolling pin and mixed with melted butter and pat the mixture on the bottom and sides of a pie pan. (I didn’t make the crust instead I bought a premade crust at the grocery store)
Filling:
- 26 regular size marshmallows
- 3/4 cup of milk
- 1 1/2 ounces of creme de menthe
- 1 1/2 ounces of creme de cacao
- 1/2 pint of whipping cream
Melt the marshmallows in the milk in a double boiler. Add the two liquors. Mix and cool to a syrupy texture. At the same time whip the cream to the point it has soft peaks. Fold the mint mixture into the whipping cream and pour into the crust. Chill.
